Rainbow Veggie Mason Jar Salad


Ingredients

Dressing

  • 1/4 Cup Tahini
  • juice 1 lemon
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Red Pepper Flakes
  • pinch salt and pepper
  • 2 tbsp Water

Salad

  • 1 cup Chickpeas
  • 1 cup red bell pepper, chopped
  • 1 cup carrots, sliced
  • 1 cup cucumber, chopped
  • 1 cup cabbage, sliced
  • 4 cups Spinach

Instructions

  1. Whisk together the dressing ingredients until smooth and creamy. Add additional water to think the consistency if needed.
  2. Evenly divide the dressing between two quart-sized mason jars.
  3. Evenly divide the chickpeas, red pepper, carrots, cucumbers, cabbage, and spinach between the two mason jars, layering in that order. Screw on the lid and store in the refrigerator.
  4. When ready to serve, simply pour the entire contents of the jar into your bowl and enjoy!
