Granola Bars
Ingredients
- 1 3/4 cup rolled oats, half processed
- 1 cup out flour
- 3/4 cup packed light brown sugar
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 1/3 cup pecans/almonds, and/or pumpkin seeds, roughly chopped
- 1 cup coconut flakes
- 1 cup mini chocolate chips (or dried fruit)
- 1/2 cup unsalted butter, melted
- 1/3 cup honey, maple syrup, molasses
- 1 egg
- 1/2 tsp vanilla extract
Directions
- Preheat over to 375oF. Grease a 9" square pan and line it with parchment paper that overhangs. Set the pan aside.
- In a large bowl place the oats, oat flour, brown sugar, cinnamon, and salt and mix to combine.
- Add the chopped nuts, coconut flakes, chocolate chips, and dried fruit to the mix and combine.
- In a separate, medium bowl, place the melted butter, honey/maple syrup/molasses, egg and vanilla and mix to combine well.
- Create a well in the dry ingredients and pour in the wet ingredients and mix to combine. Scrape the mixture into the prepared pan and press firmly to form an even layer.
- Bake in the oven, rotating once, until golden brown all over (about 25 minutes).
- Allow to cool in the pan for 10 minutes, then transfer to the freezer until very firm (about 30 minutes).
- Remove from pan and peel the parchment paper off. Slice into 12 rectangular bars with a sharp knife.
- Store in an airtight container in the refrigerator for up to one week.
