Granola Bars


Ingredients

  • 1 3/4 cup rolled oats, half processed
  • 1 cup out flour
  • 3/4 cup packed light brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/3 cup pecans/almonds, and/or pumpkin seeds, roughly chopped
  • 1 cup coconut flakes
  • 1 cup mini chocolate chips (or dried fruit)
  • 1/2 cup unsalted butter, melted
  • 1/3 cup honey, maple syrup, molasses
  • 1 egg
  • 1/2 tsp vanilla extract

Directions

  1. Preheat over to 375oF. Grease a 9" square pan and line it with parchment paper that overhangs. Set the pan aside.
  2. In a large bowl place the oats, oat flour, brown sugar, cinnamon, and salt and mix to combine.
  3. Add the chopped nuts, coconut flakes, chocolate chips, and dried fruit to the mix and combine.
  4. In a separate, medium bowl, place the melted butter, honey/maple syrup/molasses, egg and vanilla and mix to combine well.
  5. Create a well in the dry ingredients and pour in the wet ingredients and mix to combine. Scrape the mixture into the prepared pan and press firmly to form an even layer.
  6. Bake in the oven, rotating once, until golden brown all over (about 25 minutes).
  7. Allow to cool in the pan for 10 minutes, then transfer to the freezer until very firm (about 30 minutes).
  8. Remove from pan and peel the parchment paper off. Slice into 12 rectangular bars with a sharp knife.
  9. Store in an airtight container in the refrigerator for up to one week.
