Cheesy Baked Potato with Salami
Ingredients
- 6 potatoes
- 1 tsp Salt
- 1 tsp Pepper
- 1 Salami, sliced and halved
- 1/2 cup Tomato Sauce
- 1/2 cup Mozarella Cheese, shredded
Directions
- Slice potatoes, cutting 3/4 through, careful not to cut all the way through.
- Place the potatoes in a cast iron pan, season with Salt and Pepper, then bake in the oven at 425oF for 45 minutes.
- While the potatoes are baking, slice the salami thinly, then cut the slices in half so that they form half moons.
- Once the potatoes are done, take them out of the oven, slide one half moon of salami into each slice of the potato. Then spoon Tomato sauce over the potato and sprinkle Mozarella Cheese on top.
- Return the potatoes to the oven and cook until cheese melts and starts to brown (about 5-10 minutes)
