Mexican Corn Salad


Ingredients

  • 8 small ears of corn
  • 1 clove garlic, minced
  • 1 tbsp red onion, minced
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1/3 cup mayonnaise
  • 1 tsp chili powder
  • 1 1/4 cup ricotta cheese (feta as substitute)
  • salt
  • pepper

Directions

  1. Mix garlic, onions, and lime juice in a large bowl, let sit for 10 minutes
  2. Brush corn with oil and grill over medium heat until charred and just tender. Cut kernels off the corn.
  3. Whisk mayonnaise and chilli powder into the lime juice mix. Add corn and cheese to the bowl and toss. Season with salt and pepper as needed
