Mexican Corn Salad
Ingredients
- 8 small ears of corn
- 1 clove garlic, minced
- 1 tbsp red onion, minced
- 2 tbsp fresh lime juice
- 1 tbsp olive oil
- 1/3 cup mayonnaise
- 1 tsp chili powder
- 1 1/4 cup ricotta cheese (feta as substitute)
- salt
- pepper
Directions
- Mix garlic, onions, and lime juice in a large bowl, let sit for 10 minutes
- Brush corn with oil and grill over medium heat until charred and just tender. Cut kernels off the corn.
- Whisk mayonnaise and chilli powder into the lime juice mix. Add corn and cheese to the bowl and toss. Season with salt and pepper as needed
