Beef Burrito
Ingredients
Burrito Seasoning
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp salt
- 2 tsp cumin
- 2 tsp paprika
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
Beef
- 1/2 tbsp olive oil
- 2 cloves of garlic
- 1/2 onion, finely chopped
- 1 lbs ground beef
- 2 tbsp tomato paste
- 3 tbsp water
Burritos
- 6 - 8 large soft flour tortilla
- 3 cups cooked rice
- 3 cups iceberg lettuce (or cabbage), finely sliced
- 1 can corn
- 1 can black beans
- 3 tomatoes
- 1/2 red onion, finely chopped
- Cilantro
- 1 1/2 cups shredded cheese
Instructions
- In a small bowl, mix all the burrito seasoning together and set aside.
- Heat oil in a skillet over medium heat. Add garlic and onion, cook for 2 minutes until onion is lightly browned. Add beef and cook, breaking it up as you go until it is all brown.
- Add the burrito seasoning to the beef and cook for 1 more minute. Add tomato paste and water, cook for an additional 3 minutes or until the water is mostly evaporated. Remove from heat and set aside for 10 minutes.
- Build the burritos, each with rice, beef, lettuce, corn, black beans, tomatoes, red onion, cilantro, and cheese.
- Fold the burrito tightly, then wrap in foil.
- Warm the burrito in the oven at 350oF for 20 minutes in the foil.
