Beef Burrito


Ingredients

Burrito Seasoning

  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tsp cumin
  • 2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper

Beef

  • 1/2 tbsp olive oil
  • 2 cloves of garlic
  • 1/2 onion, finely chopped
  • 1 lbs ground beef
  • 2 tbsp tomato paste
  • 3 tbsp water

Burritos

  • 6 - 8 large soft flour tortilla
  • 3 cups cooked rice
  • 3 cups iceberg lettuce (or cabbage), finely sliced
  • 1 can corn
  • 1 can black beans
  • 3 tomatoes
  • 1/2 red onion, finely chopped
  • Cilantro
  • 1 1/2 cups shredded cheese

Instructions

  1. In a small bowl, mix all the burrito seasoning together and set aside.
  2. Heat oil in a skillet over medium heat. Add garlic and onion, cook for 2 minutes until onion is lightly browned. Add beef and cook, breaking it up as you go until it is all brown.
  3. Add the burrito seasoning to the beef and cook for 1 more minute. Add tomato paste and water, cook for an additional 3 minutes or until the water is mostly evaporated. Remove from heat and set aside for 10 minutes.
  4. Build the burritos, each with rice, beef, lettuce, corn, black beans, tomatoes, red onion, cilantro, and cheese.
  5. Fold the burrito tightly, then wrap in foil.
  6. Warm the burrito in the oven at 350oF for 20 minutes in the foil.
