Mexican Salad


Ingredients

  • 1 head of romaine lettuce, rinsed, chopped, and dried
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cucumber, sliced
  • 1 small red onion, sliced
  • 1 can Kidney beans
  • 1 can corn
  • 1 red bell pepper
  • 1/2 cup black olives, halved
  • 1/3 cup Fresh Cilantro
  • 1 cup Feta Cheese
  • 1/3 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1 tbsp Honey
  • 3 tbsp Lime Juice
  • lime zest
  • 1/4 tsp Cumin
  • 1/4 tsp Chili Powder
  • 1/2 tsp salt
  • 1/8 tsp pepper

Directions

  1. Combine olive oil, red wine vinegar, honey, lime juice, lime zest, cumin, chili powder, salt, and pepper in a small bowl and set aside.
  2. In a larg bowl, combine the romaine lettuce, tomatoes, avocado, cucumber, red onion, kidney beans, corn, bell pepper, olives, and cilantro.
  3. Add the dressing to the ingredients and toss.
  4. Garnish with feta cheese on top and serve.
