Mexican Salad
Ingredients
- 1 head of romaine lettuce, rinsed, chopped, and dried
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cucumber, sliced
- 1 small red onion, sliced
- 1 can Kidney beans
- 1 can corn
- 1 red bell pepper
- 1/2 cup black olives, halved
- 1/3 cup Fresh Cilantro
- 1 cup Feta Cheese
- 1/3 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- 1 tbsp Honey
- 3 tbsp Lime Juice
- lime zest
- 1/4 tsp Cumin
- 1/4 tsp Chili Powder
- 1/2 tsp salt
- 1/8 tsp pepper
Directions
- Combine olive oil, red wine vinegar, honey, lime juice, lime zest, cumin, chili powder, salt, and pepper in a small bowl and set aside.
- In a larg bowl, combine the romaine lettuce, tomatoes, avocado, cucumber, red onion, kidney beans, corn, bell pepper, olives, and cilantro.
- Add the dressing to the ingredients and toss.
- Garnish with feta cheese on top and serve.
