Poolish


Ingredients

  • 200 g '00' flour
  • 200 g water
  • 5 g honey
  • 5 g yeast

Directions

  1. Measure water, honey, and yeast into a plastic container and mix until all the yeast is disolved
  2. Add flour and mix together until uniform, let this sit in the open for 15 minutes.
  3. Seal the container and leave at room temperature for 1 hour.
  4. Place the container in the fridge for 16-24 hours.

Note: If the mixture stays in the fridge for more than 24 hours, it will turn acidic and will no longer be good.
