Chicken Tortilla Soup


Ingredients

  • 3 tbsp Butter
  • 1 tsp Garlic, minced
  • 1 medium Onion, finely chopped
  • 5 cups Chicken Broth
  • 1 cup Salsa
  • 2 cooked Chicken Breasts, boneless and skinless, shredded
  • 1 cup Monterey Jack Cheese, grated
  • 1 cup Cheddar Cheese, grated
  • 1 can Black Beans
  • 1 can Kidney Beans
  • 1 can Corn
  • 1 can Diced Tomatoes
  • 2 tsp Ground Cumin
  • 1 package Fajita Seasoning
  • 1 bag Tortilla Chips

Directions

  1. In a large pot, melt the Butter over medium heat.
  2. Add the Garlic and Onion and cook until softened (about 5 minutes).
  3. Stir in the Broth and the Diced Tomatoes and bring to a slow boil.
  4. Add the Salsa, Chicken, Corn, Black Beans, Kidney Beans, Cumin, and Fajita Seasoning.
  5. Lower the hear and simmer for 15 minutes.
  6. Serve the soup in bowls and garnish with Cheese and Tortilla Chips
