Chicken Tortilla Soup
Ingredients
- 3 tbsp Butter
- 1 tsp Garlic, minced
- 1 medium Onion, finely chopped
- 5 cups Chicken Broth
- 1 cup Salsa
- 2 cooked Chicken Breasts, boneless and skinless, shredded
- 1 cup Monterey Jack Cheese, grated
- 1 cup Cheddar Cheese, grated
- 1 can Black Beans
- 1 can Kidney Beans
- 1 can Corn
- 1 can Diced Tomatoes
- 2 tsp Ground Cumin
- 1 package Fajita Seasoning
- 1 bag Tortilla Chips
Directions
- In a large pot, melt the Butter over medium heat.
- Add the Garlic and Onion and cook until softened (about 5 minutes).
- Stir in the Broth and the Diced Tomatoes and bring to a slow boil.
- Add the Salsa, Chicken, Corn, Black Beans, Kidney Beans, Cumin, and Fajita Seasoning.
- Lower the hear and simmer for 15 minutes.
- Serve the soup in bowls and garnish with Cheese and Tortilla Chips
